
Ingredients
- 2 sticks of butter, soften
- 1 1/2 cups sugar
- 1 tsp vanilla
- 1 egg
- 2 1/2 cups of flour
- 1 tsp salt
- 1/2 tsp baking soda
- 10g freeze dried strawberries
- 4 – 5 fresh strawberries
- Zest of one lemon
- 3 TBS lemon juice
- Sugar for rolling
Directions
- Preheat oven to 350 degrees
- Cream together butter, sugar and vanilla.
- Add egg. Mix until smooth.
- Add flour, salt, baking soda. Mix until combined. Divide in half and leave half in the mixing bowl.
- In the mixing bowl, add lemon juice and zest to the dough. Mix until combined. (You can add yellow coloring if desired). Take out of bowl
- Blend up the freeze dried strawberries until a powder. Add to a small bowl. Blend the fresh strawberries and strain through a fine mesh strainer. Add to the small bowl of powdered strawberries and mix into a paste.
- Add other half of dough to the mixing bowl. Add the strawberry paste to the bowl and mix until all incorporated into the dough.
- Scoop half of the strawberry dough and half of the lemon dough with a cookie scoop and roll in sugar. Place on a prepared cookie sheet.
- Bake cookies for 10-12 minutes. Cool and enjoy!!
