Cowboy Cookies

I would have to say that these cookies probably land in my top three of favorite cookies! I first found them in a church cookbook when I was around 12-13 and have been addicted since! They blend together perfectly a chocolate chip cookie with an oatmeal cookie with an almond joy with cinnamon! Haha I mean all it’s missing is peanut butter and you would have a complete explosion in your mouth!

This recipe makes a cowboy size serving!! Normally I get around 4-5 dozen cookies from one batch! So what I like to do is make the dough and freeze half of it. I scoop it out into balls and then place them on a pan to stick in the freezer. Then when I am in a rush and need a fresh batch of cookies, I’ll pull them out! I let them thaw for about 10 minute and then plop them in the oven and bake them like normal. I love freezing cookie dough like this because you only have to have the dirty dishes once and cookies as many times as you want! If you want a fun treat one night to surprise your hubby, pull out 3-4 dough balls and cook them just for the both of you!

Ingredients

  • 1 1/2 cup butter (three sticks) room temperature
  • 1 1/2 cup sugar
  • 1 1/2 cup brown sugar
  • 3 eggs
  • 1 T vanilla
  • 3 cup flour
  • 1 T baking powder
  • 1 T baking soda
  • 1 T ground cinnamon
  • 1 tsp salt
  • 3 cups chocolate chips
  • 3 cups old-fashioned oats
  • 2 cups sweetened coconut flakes

Directions

(Mix in a very large bowl. I can normally mix all the normal ingredients in my kitchenaid and then hand stir in the chips, oats and coconut)
