Thai Peanut Sauce

One of my favorite go to meals for dinner is Thai Bowls. I love how you can include fresh or cooked veggies. Everyone can pick what they like to eat. And who doesn’t love a good peanut sauce?!

Ingredients

  • Peanut Sauce
    • 1/2 cup peanut butter, creamy
    • 3 Tbsp. soy sauce, low sodium
    • 2 Tbsp. honey
    • 2 Tbsp. rice vinegar (seasoned)
    • 2 Tbsp. lime juice
    • 3 cloves garlic, minced
    • 1 Tbsp. sesame oil
    • 2 tsp. sriracha
    • 2 tsp. chili garlic sauce
    • 1/4 tsp. red pepper chili flakes (optional)
  • Bowl options
    • Rice or rice noodles
    • Cucumbers
    • Carrots
    • Herbs (cilantro or basil)
    • Peppers
    • Coleslaw
    • Peanuts
    • Cooked chicken

Directions

  1. Prepare any of the bowl options. Cook the rice or noodles. Dice up any veggies.
  2. Make the Thai peanut sauce. Gather all ingredients and whisk together in a medium sized bowl. This recipe makes 1 cup Thai peanut sauce. Set aside. (If the sauce is too thick, add water until desired consistency.)
  3. Add rice, veggies and meat to a bowl. Top with sauce and enjoy!
