One of my favorite go to meals for dinner is Thai Bowls. I love how you can include fresh or cooked veggies. Everyone can pick what they like to eat. And who doesn’t love a good peanut sauce?!

Ingredients
- Peanut Sauce
- 1/2 cup peanut butter, creamy
- 3 Tbsp. soy sauce, low sodium
- 2 Tbsp. honey
- 2 Tbsp. rice vinegar (seasoned)
- 2 Tbsp. lime juice
- 3 cloves garlic, minced
- 1 Tbsp. sesame oil
- 2 tsp. sriracha
- 2 tsp. chili garlic sauce
- 1/4 tsp. red pepper chili flakes (optional)
- Bowl options
- Rice or rice noodles
- Cucumbers
- Carrots
- Herbs (cilantro or basil)
- Peppers
- Coleslaw
- Peanuts
- Cooked chicken
Directions
- Prepare any of the bowl options. Cook the rice or noodles. Dice up any veggies.
- Make the Thai peanut sauce. Gather all ingredients and whisk together in a medium sized bowl. This recipe makes 1 cup Thai peanut sauce. Set aside. (If the sauce is too thick, add water until desired consistency.)
- Add rice, veggies and meat to a bowl. Top with sauce and enjoy!
