The Perfect Dinner Rolls

Want to know my favorite thing as of lately? Finding old family recipes on old, worn, food stained cards! I love seeing which recipes people pass on and become family favorites. Well this roll recipe was given to me by a neighbor and it’s FANTASTIC!!

I loved the taste most of all and that has all to do with the shortening in the recipe. I feel like now a days people are so scared of shortening and butter…I don’t understand it! Life is way too short to worry about that and food is meant to be enjoyed! This roll recipe is exactly what I have been searching for! The texture is so light and fluffy with a dusting of flour. It stays tender for days after baking and is just delicious!!

Ingredients

  • 1/2 cup warm water
  • 1 3/4 TBS yeast
  • 1 1/2 cup lukewarm milk
  • 1/2 cup sugar
  • 2 tsp salt
  • 3 eggs
  • 1/2 cup shortening
  • 7 – 7 1/2 cups flour
  • 4-6 TBS butter, melted

Directions

  • Mix yeast, water, milk and sugar together in a large mixing bowl. Allow to proof for 5-10 minutes.
  • Add salt, eggs, shortening and 3 cups of flour. Mix until the shortening and eggs are incorporated in the dough. Continue to add the rest of the flour until it starts to pull away from the bowl and barely sticks to your fingers.
  • Remove from bowl, grease bowl and place back inside. Cover with a damp towel and allow to rise until doubled. (I also turn on my oven for 5 minutes then turn it off and allow the bowl to rise inside with all the warmth. Just make sure to turn it off! Haha) It should take around 1-1.5 hrs.
  • Once doubled, remove and punch down. Cover with towel again and allow to double again. (This is the step I found that most changes the texture!!) Allow around 30 minutes.
  • Remove from bowl and divide into two balls. Flour the counter and roll each ball into a large circle. Pour melted butter over the circles and spread out to cover all the surfaces. Then divide the circles into pie shapes with a pizza cutter depending on the size you prefer.
  • Once the circles of dough are divided, roll up into a croissant shape. Start at the wide end, roll up to the smaller end. Place on a greased pan with smaller end tucked underneath. Allow to rise (15-20 minutes)
  • Bake in oven at 350 for 12-15 minutes. Remove and cool on a rack. Enjoy fresh with butter and jam!
